Do I have to use IMCE?

No. Acquia Cohesion allows the site builder to select, either use of IMCE or Entity browser for browsing and selecting images.

The style preview may not be updated because the refresh icon hasn't been toggled to the active state.

Yes. As long as you are using the Cohesion text format you will see two new menus ‘Element styles’ and ‘Inline styles’. Use these to apply custom styles.

Why, when I add a block quote via the WYSIWYG, is the text size different to what I’ve set in my Block quote style?

The WYSIWYG (ckeditor) adds a paragraph tag around the text within the block quote. This causes it to inherit the text size of your paragraph base style.
